You could go with Dreamweaver's defaults, i suppose...which allow for a bit more uniformity between platforms:

<font face="Arial, Helvetica, sans-serif">
<font face="Times New Roman, Times, serif">
<font face="Courier New, Courier, mono">
<font face="Georgia, Times New Roman, Times, serif">
<font face="Verdana, Arial, Helvetica, sans-serif">
<font face="Geneva, Arial, Helvetica, san-serif">

the ones I mentioned arn't actually fonts, but font-families. What it does, is find the font that best fits the description of the "family name"
I usually do something like: < div class= "font-face: 'times new roman', 'times', 'serif'; font-size: 14px;" > bla bla < /div>
